Chocolate Sugar Cookies

This is my first post as a proud new member of The Secret Recipe Club.  This month I am sharing with you a recipe from The Daily Dishes Recipes site for Simple Chocolate Chip Cookies.

You know me, I love easy to make recipes when running short on time and this one was quick and simple to prepare.  Plus anything with chocolate is a winner in my books.  This recipe gets an A+ !

Everything begins in the bowl of your stand mixer.  First you combine the dry ingredients (except cocoa) then gradually add in wet until finally mixing in the crowning glory - 1/2 cup of heavenly cocoa powder. That's it - cookie dough is done!  No sifting, no multitude of mixing bowls...nada.  Just one bowl, a few key ingredients and you are good to go.

These cookies are the perfect consistency - crispy edges with chewy centers.  They have a rich buttery and chocolate flavor.  If you opt for dark cocoa powder you will get an even deeper chocolate hit which is always my preferred choice.

Some advice:  when first out of the oven, don't be too overly eager to remove the cookies from the pan. They are very delicate and need time to set before being transferred to a cooling rack.  A few minutes resting in the pan is essential.  When they are ready to be transferred to cooling racks, ensure you use a hard spatula for stability.

These were a hit with the entire family and will now be a staple in our home.  Pair then with a glass of milk and you will have found nirvana. I am confident you will LOVE them as much as we do.

RECIPE:
slightly adapted source recipe - Simple Chocolate Sugar Cookies,  The Daily Dishes Recipes

WHAT YOU NEED

1 1/4 cup all purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cup sugar
2 sticks of unsalted butter ( 1 cup) at room temperature
1 egg
1/2 cup unsweetened cocoa powder

MAKE IT

PREHEAT oven to 375F
LINE 2 cookie sheets with parchment paper

IN BOWL OF STAND MIXER fitted with paddle attachment, combine first 5 ingredients
SLOWLY add in butter ( I broke the sticks apart into approx. 1 tablespoon sized bits when adding to dry ingredients)
ADD in egg and blend til just combined
ADD in cocoa powder and blend 1-2 minutes on MED speed
ROLL dough into 1 1/2 inch sized balls (or rounded tsp size)
PLACE on cookie sheet leaving 2 inch spaces between cookies as they do spread during baking
PRESS DOWN cookies to flatten only slightly
BAKE 8-10 minutes or until edges start to darken slightly (cookies will puff up in middle but will flatten out once cooled)
REMOVE from oven
LET cookies cool in pan for 2-3 minutes then transfer to cooling rack

ENJOY !

  16. To prevent spreading, there are 3 things you can do to make a taller cookie. sub 1/2 the butter for equal part butter flavor crisco - refridgerate the dough before baking - add 1 tsp corn starch to batter.
    These sound yummy.
