Decadent Lemon Cupcakes

I have been and always will be a cupcake girl.  I love any flavor, frosted or plain, filled with ganache or just dusted with icing sugar.  It all works for me.  Is chocolate at the top of my list? Second. The top is lemon. Nothing quite beats the taste of a fresh, citrus dessert where I am concerned. I love pies, puddings, cookies and squares but most of all I love sweet cupcakes infused with the gorgeous flavors of lemon.

And this cupcake does it for me:  moist, cakey, sweet and gently scented with the zest of a lemon.  The frosting is smooth, creamy and , you guessed it,  lemony.  Pair this with a cup of tea and all your worries will melt away.  Perfection.

Devil Food Cupcakes

Wishing you all a wonderful day filled with pink hearts, red roses, dark chocolate and LOVE!  Valentine's Day would not be the same without a sweet treat and cupcakes are a great way to celebrate the day.  These cupcakes are rich devil's food topped with a creamy, buttery frosting tinted pink for the occasion.  I piped on a rose design but swirls would look great too.

The cupcake crumb is light, fluffy and  simply of divine - nothing dense or dry about these guys. The rich frosting is the perfect topper and super simple to make:  just butter, powdered sugar, some cream,  vanilla extract and voila - an amazing frosting!  Tint it with some red or pink gel until you have the color you want.  Initially I was thinking a deep red for these but when I saw the pink color I fell in love.

Chocolate Butterscotch Halloween Cupcakes

I know - it's still September but I think it is time for some Halloween treats, don't you? Besides, there is meaning to my madness in posting these lovelies even though Halloween is a little over a month away. That is because giveaway time is fast approaching. Stay tuned to see my post this coming Saturday for a Halloween themed giveaway here at Lemon Drop!

In addition to my desire to make Halloween inspired treats and the upcoming giveaway, it is also Wednesday in our household and Wednesday is dessert night. It is not just any normal dessert night either but gluten-free dessert night. My son is on a gluten free diet . Why? Well he definitely has food sensitivities to wheat. No question about it. Plus, he is autistic and a gluten-free diet (dairy too but that doesn't seem to be an issue for him) is high up on the list of strategies many use to help manage the disorder. Honestly, I am still on the fence with the latter but it can't hurt! As a result, all of my baked goodies that he enjoys must be gluten-free.

His favorite type of dessert? You guessed it : Cupcakes! And that is why I am here today posting my recipe for Chocolate Butterscotch Cupcakes. Ok, it is not really my recipe but rather an adapted one by Elana Amsterdam. Her recipe was for triple chocolate cakes of sheer delight. I swapped out the dark and white chocolate additions for butterscotch. I also made a few more changes to the base recipe as I went along. My frosting is my beloved buttercream recipe but this time it is tinted brightly with orange icing gel. Then topped off with Halloween sprinkles !

If you like the sprinkles then be sure to pick up Wilton's new Halloween Test Tube Sprinkles pack.

For the liners I once again tested out Reynold's new StayBrite liners and again, true to their word, they stayed bright and vibrant.

I frosted these with a 1M Wilton Swirl tip but feel free to use any tip you want. The french tip is also quite nice.

No almond flour in these this time around. Instead the dry base is a mixture of coconut flour, deep dark cocoa powder, some salt and baking soda. The sweetness comes from honey and the moisture comes from 3 eggs (and yes, the honey too of course). Some people worry that the flavor of coconut will come through. Trust me it doesn't. Plus a little bit of coconut flour goes a long way. This type of flour is very "thirsty" so you only need a small amount. This recipe only calls for 1/4 cup and believe me, that is all you need.

These are rich and luscious. The recipe only makes 9 cupcakes so if you want more then go ahead and double up the ingredients.

Don't worry about the batter being runny. It will bake up nice and fluffy. Just fill the cups 3/4 full with batter and bake away.

So without further delay, let's get baking !

Gluten-Free Gingerbread Cupcakes

Another fall recipe and expect many more! I love this time of the year and cannot get enough of fall baking. Spices abound!

What better way to welcome in this cooler season with Gingerbread Cupcakes? These are gluten-free and contain coconut flour vs a wheat-based flour. They are rich, super moist and spiced to perfection. I topped them with a vanilla bean buttercream but a cream cheese frosting would also be incredible.

For depth of flavor I added 1/4 cup of molasses to accompany the honey as a sweetener. It adds a dark spicy flavor so well loved in gingerbread.

These little cakes are perfect for back to school treats or to savor with a hot drink on a cool night. I will be making many more of these !

Vanilla Bean Cake with Vanilla Buttercream Frosting

A perfect birthday cake which was greatly enjoyed this past weekend as a way to celebrate my step-daughter's sweet 16th birthday. This is rich with vanilla flavor from top to bottom.

The special ingredient? Evaporated Milk - It adds a lovely level of moisture and richness.
As far as vanilla cakes goes, this one packs a punch. It is filled with vanilla. I added 4 teaspoons of vanilla bean paste to the batter and then even more pure vanilla extract to the frosting. This cake truly has the flavor you would associate with an old-fashioned birthday cake. The frosting really is the crowning glory.

The original recipe comes from Rock Recipes blog but the frosting is all mine. Combined they are a hit !

I do find this cake is best enjoyed the same day it is assembled. If you need to keep it in the refrigerator then just ensure it has a good hour to come to room temperature before serving.

This cake can also tend towards the crumbly crust side so I recommend a crumb coating of frosting, a stay in the fridge for 15 minutes, and then the final frosting.

So without further delay, let's get at it !

I won't bother re-posting the cake recipe but instead I will direct you to the source: The Best Vanilla Cake by Rock Recipes. The only change I made was I substituted vanilla bean paste for the pure vanilla extract.

Now on to the frosting.

My Perfect Vanilla Buttercream Frosting

RECIPE:

This recipe is enough to frost a double layer cake - and have enough left over for piping decorations around it too!

WHAT YOU NEED

2 cups unsalted butter at room temperature
6 cups icing sugar, sifted
2 tablespoons plus 2 teaspoons pure vanilla extract
4 tablespoons half and half or heavy cream

MAKE IT

IN BOWL OF STAND MIXER fitted with paddle attachment, slowly beat butter and sugar for 1 minute then increase speed to high and beat for 5 minute * do not shorten this time, it is essential to beat for at least 5 minutes to ensure a smoothy and fluffy consistency
SCRAPE down sides of bowl
ADD vanilla extract and cream
BEAT 1 MIN high speed
ADD food coloring if desired and blend well

Gluten-Free Creamsicle Cupcakes

With summer fast approaching, memories of orange creamsicles come flooding back to me. They were, by far, my favorite summer treat. That and banana popsicles!

I wanted to make a gluten-free cupcake that would do justice to the classic creamsicle ice cream indulgence. After much research, I settled on a source recipe from The Allergen-Free Baker's Handbook for Orange Chiffon Cake. Then I adapted it quite severely to go from a cake to these fluffy, orange, cream filled delights you see here today.

The chiffon batter does tend to settle after baking so you will have a flat cupcake top. Perfect for what you need to do next and that is cut out the top with a melon baller, fill with creamy vanilla buttercream and then place the cutout cupcake piece back on top.

For the frosting, I took the vanilla buttercream filler frosting and jazzed it up with orange food coloring, orange extract and then piped it all with my Wilton 1M tip. The crowning glory: a little orange gummy candy and an orange candy stick which I simply cut in half as one large one is simply overkill for these beauties.

To begin, you will want to have 1 orange handy and some orange juice (pulp free). I added the scrapings of 1 vanilla bean to the batter plus one in the icing so I highly recommend you have these on hand as well. The vanilla bean enhances the entire cupcake from top to bottom giving it that vanilla flavor so well loved in the creamsicle treat.

This is my staple go-to book for gluten-free baking . I couldn't live without it. As with the Chocolate Cupcake recipe also posted here on Lemon Drop, the original Orange Chiffon one in her book is both vegan and gluten-free. My focus was simply to retain its gluten-free qualities. Therefore, I did used eggs rather than egg replacer.

Basic Gluten-Free Baking Mix
used throughout the book:
  • 4 cups superfine brown rice flour (preferably from Authentic Foods)
  • 1 1/3 cups potato starch (NOT potato flour)
  • 2/3 cup tapioca flour or tapioca starch
You will need 3 cups of this baking mix blend for this cupcake recipe.

NOW LET'S GET STARTED!

RECIPE:

WHAT YOU NEED

CUPCAKES
2 cups fine granulated sugar
1 egg
1 cup orange juice (pulp free)
zest of one medium orange
scrapings of 1 vanilla bean
1 teaspoon pure vanilla extract
3 tablespoons canola oil (Crisco oil is great)
3 cups gluten-free flour mix (see above)
3/4 teaspoon xanthum gum
4 teaspoons baking powder
1/2 teaspoon salt
orange food coloring gel or liquid food coloring

FILLING/FROSTING
2 1/2 cups unsalted butter at room temperature
6 cups icing sugar, sifted
scraping of one 1 vanilla bean
3/4 cup whipping cream

FROSTING EXTRAS:
1 1/2 teaspoons orange extract
orange food coloring gel
orange gummy candies
orange candy sticks, cut in half

MAKE IT

LINE muffin pans (2) with 16 liners.
PREHEAT oven to 350F

IN LARGE BOWL, with electric mixer, blend together sugar and egg for 1 minute, MED speed
ADD orange juice, zest, vanilla bean scraping, liquid vanilla and oil
BEAT MED speed 1 minute
IN MEDIUM BOWL, whisk together remaining cupcake ingredients
SLOWLY ADD to wet ingredients in 3 batches, mixing slightly after each addition.
BLEND together at MED speed for 1 minute
ADD food coloring and blend into batter on LOW speed just until you have the color you want.
WITH ice cream or cookie scoop, fill liners 3/4 full
BAKE 15-18 minutes testing with a toothpick in center; if it comes out clean then they are done!
LET COOL in pan for 5 minutes
REMOVE and let cupcakes cool on rack completely for 1/2 hr

IN LARGE BOWL, with electric mixer, cream butter for 1 minute MED speed
SLOWLY add icing sugar and continue mixing for 4-5 minutes MED speed
ADD vanilla bean and whipping cream. When adding whipping cream, add only a little at a time until you reach your desired consistency

WITH MELON BALLER, scoop out a circle from each cupcake, approximately 1 inch deep. Set cut out tops aside.
WITH teaspoon, fill cut out areas with 1 teaspoon of white frosting.
COVER with cupcake cutouts
WITH remaining icing, add orange extract. Start adding food coloring: A little goes a long way so start adding a little bit at a time and mix after each addition until desired color is reached.

FILL piping bag with orange frosting and pipe onto cupcakes. I used a Wilton 1M tip for the swirls on top.

TOP with candy and orange stick.

ENJOY !!!

Gluten-Free Maple Chocolate Cupcakes

I am a true maple syrup fanatic and right now, given the season, it is a perfect time to indulge. When I saw this gluten-free cupcake recipe in one of my favorite cookbooks, I knew I had to make them. Chocolate and maple syrup is a wonderful combo and this cupcake is a great way to enjoy them both in one big bite!

The original recipe can be found in Cybele Pascal's book The Allergen-Free Baker's Handbook.

As with the Snickerdoodle recipe also posted here on Lemon Drop, the original one in her book is both vegan and gluten-free. My focus was simply to retain its gluten-free qualities. Therefore, I used buttermilk and butter in this recipe instead of her alternative ingredients. I also made a vanilla buttercream frosting instead of the rice milk chocolate ganache in the book.

Basic Gluten-Free Baking Mix
used throughout the book:
  • 4 cups superfine brown rice flour (preferably from Authentic Foods)
